Daniel learned that highly acidic ingredients deserved particular attention. Tomatoes, vinegar, citrus, and other acidic foods could interact with a poorly seasoned or recently stripped cast-iron surface. A short cooking step might not cause serious damage to a well-maintained skillet, but prolonged simmering could weaken the seasoning and sometimes give food a metallic flavor. When a recipe called for a long tomato sauce, he reached for his enamel-coated cookware instead. He no longer left food sitting in the skillet or allowed it to soak in water overnight. Most importantly, he stopped believing that cast iron required complicated rituals. The real secret was understanding its limits: avoid prolonged exposure to acidic foods, excessive soaking, harsh cleaning, and careless storage, while keeping the surface appropriately protected. Even if the seasoning became damaged, he knew it could be rebuilt through cleaning and reseasoning. Daniel finally understood that cast iron was not difficult to use. It simply rewarded people who paid attention. With a little care and the right cooking techniques, his skillet could continue producing excellent meals for many years.
