What You Should Never Cook in a Cast Iron Skillet (and Why) 2

Highly acidic ingredients are among the biggest challenges for cast iron cookware. Foods containing tomatoes, vinegar, citrus juice, or wine can gradually wear down the seasoning and react with the exposed metal beneath. Although cooking a small amount of acidic food occasionally is unlikely to harm a well-seasoned pan, long-simmering sauces and acidic dishes are generally better prepared in stainless steel or enameled cookware.

Delicate and sticky foods can also create problems. Fragile fish fillets may stick to the surface and fall apart when turned, while eggs often cling if the seasoning is not fully developed. Sugar-rich sauces are another concern because they burn easily, leaving stubborn residue that can damage the seasoning and make cleaning much more difficult.

Cast iron naturally absorbs some of the flavors from strongly seasoned dishes. Recipes loaded with garlic, curry spices, or smoky ingredients can leave behind lingering aromas that may affect sweeter foods cooked afterward. For this reason, some cooks prefer using separate pans for savory dishes and baked desserts to avoid unexpected flavor transfer.

Moisture is another major enemy of cast iron. Boiling food for long periods, soaking the pan in water, or storing leftovers inside the skillet can weaken the seasoning and encourage rust. Sudden temperature changes, such as placing a hot skillet under cold water, may even cause the pan to crack. By drying cast iron thoroughly, applying a light coat of oil after cleaning, and choosing suitable recipes, you can keep your skillet in excellent condition and enjoy reliable performance for many years.
